    Liz’s Apple-Walnut Salad with Feta

    Salad Ingredients:

    • 1 bag mixed greens, washed and dried
    • 3/4 cup walnuts, toasted
    • 1 granny smith apple, cored and thinly sliced
    • 1/2 cup craisins
    • 1/4 cup feta cheese

    Directions:

    Preheat oven to 350 degrees.  Bake walnuts in a single layer in a shallow pan 7-9 minutes or until toasted and fragrant, stirring halfway through.

    Add the mixed greens to a salad bowl.  Add other ingredients and toss.  Top with Red Apple Balsamic

    Vinaigrette:

    • ½ cup Prima Oliva Extra Virgin Olive Oil (mild)
    • ¼ cup Prima Oliva Red Apple Balsamic Vinegar
    • ½ t honey
    • 1 T Dijon Mustard
    • Salt and pepper to taste

    Whisk ingredients together and top salad.
