    Grilled Chicken with Herbs de Provence and Pomegranate Marinade

    • 1/2 c Prima Oliva Herbs de Provence olive oil
    • 1/2 c Prima Oliva Pomegranate bv
    • 3-4 tsp Prima Oliva West Indies Rub
    • Salt and Pepper to taste
    • 4 skinless, boneless chicken breasts


    Rub 3 teaspoons of West Indies rub on chicken. Combine remaining teaspoon of rub with oil and vinegar for marinade. Reserve 2-3 tablespoons of marinade. Coat chicken with marinade and place in Ziplock bag or shallow dish to marinate at least 2 hours, or overnight. Rotate chicken a few times to marinate evenly. Preheat grill to medium-high heat. Lightly oil the grill grate. Place chicken on the grill, and cook for 6-8 minutes on each side, until juices run clear. Pour some of the reserved marinade on chicken when done and serve.
