    What is Extra Virgin Olive Oil

    What is Extra Virgin Olive Oil:

    EVOO is a fruit juice derived from mechanically crushing whole olives to extract oil. The oil ranges from a crystalline champagne color to greenish-golden to bright green; generally, the deeper the color, the more intense the flavor. A Step Further: First Cold-Pressed Extra Virgin Olive Oil is made using a mechanical process by which pressure is used to extract the oil from the fruit. The olives are pressed ONCE which results in a lower quantity, higher quality yield.  This mechanical process does not require the use of ANY chemicals and produces a higher quality of olive oil, naturally lower in acidity than other oils. Keep in mind, the IOOC standard for acidity states that the oil must have FFA less than or equal to 0.8. The majority of our oils at Prima Oliva have an acidity below 0.3!

    Where does it Come From / Two Hemisphere Solution:

    EVERY oil we carry in our stores is a first cold-pressed extra virgin olive oil. Our distributor works with small growers from all around the world to produce the highest quality oil in the world. In order for our distributor to accept the oil from each grower’s harvest it must go through intense chemical analysis to ensure that it meets their high quality standards. As well, utilizing a two-hemisphere solution, our distributor is able to provide us with incredibly fresh olive oil from the most recent harvest, be it the northern hemisphere or southern hemisphere regions.
    Importance: The key point with the two hemisphere’s is that we’re always getting the freshest oil from wherever most recently harvested. Freshness is so important with olive oil. Explain to customers that olives are fruits, and thus, are seasonal like all other fruits.

    Butter = Extra Virgin Olive Oil (EVOO)

    Types of Olive Oil We Carry:

    EVOO: Extra-Virgin Olive Oil that ranges from mild to robust. Does not contain any flavor infusions.
    Infused: EVOO that is infused with a flavor. (i.e. basil, chipotle, tuscan herb)
    Fused: Crushing a fruit or pepper with the olives simultaneously. (i.e. blood orange, baklouti,bergamot citrus)
    Gourmet: Our white & black truffle oils, and almond, sesame, walnut, and grape seed oils. (Note: truffle oils are infused EVOO’s while the others are actually nut oils)
